We were out to eat at my now favorite Minnesota restaurant, Tavern on the Hill when I tried their wild rice burger. I was floored. Who knew a burger made mostly of rice would be so incredibly delicious?! I scanned the description and made a mental note. When I got home, I did my best to re-create their delicious wild rice burger recipe with one little change; Tavern on the Hill uses Panko bread crumbs and having a gluten intolerance those don’t always sit too well.
Now, this is lengthier than most of my recipes but I promise it’s worth it. Especially if you have dietary restrictions
This recipe you can use traditional bread crumbs or my substitute which is simply oat flour. I blend my gluten free oats in my NutriBullet for 30 seconds and voila! Gluten free oat flour before my eyes.
The inspiration behind my burger not only came with gluten but with a ton of different cheeses as well. As luck would have it, thanks to some creativity and excessive training in the ways of vegan cooking; I was able to bust out a gluten and dairy free and vegan friendly wild rice burger recipe. Included in this recipe is a recipe for cashew “cheese” I used this as a molding to hold the burger together as well as as a spread on top of the completed burger. This recipe also calls for parmesan cheese which is the one dairy exception but can easily be replaced with a vegan friendly dairy alternative, which is what I used in the original recipe.
Wild rice burgers are great for get togethers, or if you are trying to keep a diet friendly option available for yourself or friends and family. Like I said, I was blown away when I first took a bite of these burgers I am so happy to now bring all the flavors home with me.
4 cups water for boiling
1 cup brown rice
1 cup basamati rice
3/4-1 cup bread crumbs or oat flour
1 cup parmesan cheese or vegan parmesan
1 cup lightly packed spinach
3 garlic cloves
1 tsp ground turmeric
1 tsp cumin
1 tsp parsley
1 tsp salt
1/2 tsp white pepper
1 cup cashews
1 clove garlic
1 tsp parsley
1-2 tsp salt
*Don’t forget to add your remaining cashew cheese as a spread on the top of your burger. Also, to give your burger a little added kick (which I highly recommend) I suggest picking up Just Mayo’s Chipotle seasoned. This is a totally vegan mayo substitute that doesn’t have soy in it! On top of these must haves, we love adding purple onion, tomato and lettuce to our wild rice burger.
