Sweet Potato Cakes with Spicy Aioli Ketchup

When I first started eating vegan, chickpea patties were one of my favorite things to make. Of course, eating vegan didn’t work for me; but I still prefer to eat as little meat as possible. Eating vegan also taught me to love sweet potatoes with spice. Lately I got to thinking, why not combine these two loves into one awesome patty? Plus a good dairy free aioli…ya gotta have aioli…right? Check out the recipe that even my kiddos gobbled down. Don’t worry, I’ve given you the option to kick up the spice a bit.

Instructions
  1. 1. Use fork to poke holes in sweet potatoes on all sides.
  2. 2. Wrap sweet potatoes with damp washcloth and place in microwave for 5-6 minutes.
  3. 3. While potatoes are in microwave add all other ingredients (except flour) to blender. (I use my NutriBullet.) Blend until well combined.
  4. 4. Once chickpea mixture is combined, pour into a separate bowl.
  5. 5. Scoop out insides of sweet potatoes and add to chickpea mixture. Mash together with a fork.
  6. 6. After chickpea and sweet potatoes are well mixed, stir in flour.
  7. 7. Heat olive oil in a skillet.
  8. 8. Roll dough into palm sized patties and put in skillet. Cook on each side for 5 minutes on medium-low heat.

  1. 1. Squeeze juice from lemon into blender.
  2. 2. Add all additional ingredients.
  3. 3. Blend in blender for about 1 minute to allow the egg to "whip" (and nay nay?) Stop when mixture is creamy and well combined.
  4. 4. Store in refrigerator.

      Same here. Having eaten vegetarian/vegan for 2 years it was hard finding a healthy balance. Vegan/vegetarian cooking is still a passion of mine.
