Sugar Free Gluten Free Date Sweetened Monster Cookie Recipe

Last week someone mentioned monster cookies to me and I thought to myself, “I bet I can make those healthier.” Challenge: accepted. Just as the second batch was coming out of the oven, my kids stormed the house along with the neighbor kids. I don’t know why they come to my house for snacks because we usually have things like celery and cucumbers. Not the every-day-go-to snack for kids. Well, today, this super hip mom had monster cookies on hand. Happily dishing them out, I was super excited to hear a house full of “yummy noises.” There is no bigger sign of success than a healthy cookie that all the kids gobble up! So yes, this sugar free, gluten free, date sweetened, monster cookie recipe tastes just as tasty as ever.

Browsing through regular recipes, I saw that a lot of them called for up to 2 cups of sugars! Way more than I am used to adding to my baking, so I turned to my trusty dates. I have had so much success using dates in my baking, I had a feeling I could totally make this one work for me too. Ingredients

4 1/2 cups gluten free rolls oats
2 cups pitted medjool dates
3 eggs
3 Tablespoons milk. I used coconut.
1 1/2 cups peanut butter
1/2 6oz bag chocolate chips
1/2 6oz bag mini M&Ms
2 teaspoons baking soda

Let’s get cookin’

  1. Preheat oven to 375
  2. Put dates, egg and milk into blender. Blend until creamy. (There may be date granules, but overall should be liquid) For my top recommended blender, check it out here: Must Have Blender
  3. In a large bowl, combine date and egg mixture with oats and peanut butter.
  4. Add baking soda, chocolate chips and M&Ms. The mixture will get very thick. I used my hands to kneed the mixture. (Just wash ’em good first!)
  5. Spoon and shape dough and place onto cookie sheet. Mine was un-greased.
  6. For larger cookies I formed the patty, flattened and shaped them. For the smaller ones I just rolled them into balls and then flattened them after baking.
  7. Cook for 13-15 minutes.
