In case you haven’t heard, I’m totally gluten free and mostly sugar free. Thanks to my rekindled relationship with dates, I have been able to make sticking to both of these things so much easier. One lazy evening, as Tom and I sat down to relax for the night, I got a little lazy and stumbled upon this super delicious sugar free gluten free cookie dough recipe.
I tossed some stuff into my NutriBullet and hoped for the best. As I sat there snacking on my cookie dough, I made the mistake of offering Tom a bite. After that, I had to get up and make more. Now he requests the stuff all the time. Thank goodness it really is oh, so easy and very much a guilt free dessert. I have yet to share this one with the kiddos, I mean, they already eat through our grocery bill like crazy as it is. 1 cup pitted medjool dates
2 Tablespoon peanut butter
1 teaspoon vanilla extract
1 oz cacao or dark chocolate
1. Toss dates, peanut butter and vanilla extract into blender or food processor (I always use my NutriBullet)
2. Crush or chop cacao on cutting board.
3. Once date mixture is fully blended, stir in chopped cacao.
Seriously, I told you guys, it’s that easy! Plus, it really tastes just as delicious as regular cookie dough. I have tried other recipes that involve beans, added syrups and take a ton more effort and they wind up not quite as delicious.
