Raw Monster Cookie Bar Recipe

My recent sugar free creation, Monster Cookie Recipe left me with some extra mini M&Ms and chocolate chips. So as I headed out the door to work for the day, I decided to make good use of those extra goodies and whip myself up a raw batch of Monster cookies. I took a quick snap of the cookie bars and posted to Instagram. Naturally, everyone wanted a recipe, so I re-created my thrown together bars and now I present to you my Raw Monster Cookie Bar recipe.

I highly recommend getting a good blender for recipes like this. Working with dates can be tough on a blender if you aren’t working with a high quality one. As always, I recommend my trusty NutriBullet. You can read all about my obsession here: Must Have Blender.

1 cup pitted medjool dates
1/3 cup quick oats (I used Trader Joe’s Gluten Free)
1/4 cup peanut butter
2 Tablespoons chia seeds
2 Tablespoons ground flax
1/8 cup mini M&Ms
1/8 cup mini chocolate chips

Mix it Up!

1. Add dates, chia seeds, flax and oats to blender. Blender should puree into a powder. Allow to continue blending for a 10-20 more seconds until it has formed into a dough ball
2. In a small bowl add date mix, peanut butter, chocolate chips and M&Ms.
3. Use a spoon to combine ingredients or get down and dirty and use your hands to knead the mixture.
4. After dough has started to form and become less sticky use your hands to shape it into a square.
5. Use a knife to easily cut bars out of the square you formed.
5. If you’re feeling wild, add a few additional M&Ms to the tops of your bars to give them a little added color.
These may get a little messy but they are super quick and really easy to make. They are even easier to eat! From Friday to Sunday I had to make two batches because my family had eaten through them all! So be sure to stock up on ingredients and enjoy!
