These mini treats are great for quick kid friendly snacks or a great fast grab after a workout!
Makes approximately 30 nuggets
2 cups oats (I use Trader Joe’s Gluten Free and Wheat Free Rolled Oats)
1 1/2 cups peanut butter
1/2 cup agave (maple syrup or honey)
1/2 cup chopped almonds
1/2 cup shredded coconut
1/2 cup dark chocolate or cacao chips
1 scoop chocolate or vanilla flavored protein (I use Orgain Organic Plant Based Protein Powder, Sweet Vanilla Bean, 2.03 Pound, 1 Count)
Time to get mixing!
Step 1. Combine all ingredients in large mixing bowl.
Quick Tip! If you need to chop the almonds or chocolate chips, may I recommend my trusty Pampered Chef Food Chopper. I went through this phase where I went to every in home party I was invited to. (It’s no wonder I piled up such massive credit card debt!) One of my favorite tools I got out of that dark period in my life was my food chopper! If that one is a bit too pricey, might I suggest, Cuisinart Chopper. It’s a bit more budget friendly!
Step 2. Mix ingredients together until they begin to stick. (PS don’t be jealous of my amazing peanut butter…it was fresh out of a brand new jar that I had just stirred up)
Step 3. Grab a tablespoon sized scoop of mix and begin forming it into a ball.
Step 4. Place on parchment paper and place in fridge for 20 minutes. This step is not totally necessary, but does help harden the nuggets so that they are more easily stored for later!
When you are all finished, you should have something a little like this going on.
