Potato Chowder with Cauliflower

This potato chowder is an absolute family favorite. Nothing beats being able to pop ingredients into a crock pot and walk away for the day. Especially during cold Minnesota winters, this chowder is a hearty go-to. I have even managed to sneak a little bit of cauliflower in there to make myself feel better when I give it to my kids. Besides, the cauliflower leaves “no trace” of taste behind. It’s absolutely perfect.

Potato Chowder
This easy crock pot potato chowder is perfect for chilly fall and winter nights.

Instructions
  1. 1. Peel and chop potatoes into squares.
  2. 2. Finely chop white onion and cauliflower.
  3. 3. Chop green onion
  4. 4. Add potatoes, cauliflower and onion to large crock pot
    potato chowder, soups, stews, recipe, chowder recipe, potato recipe, vegetable soup,
  5. 5. Add chicken broth and heavy cream to crock pot
  6. 6. Finely mince or crush garlic. Add into crock pot.
  7. 7. Stir in salt.
  8. 8. Let cook on low for 6 hours or on high for 4
  9. 9. Serve hot with crushed bacon and cheddar cheese.
