Pea Soup with Turkey Bacon

I went to my mama’s this summer and she insisted that I try her pea soup recipe. She promised it was delicious. Not gonna lie, I was hesitant because well…it’s pea soup. To my surprise it was totally delicious so much so that, as per usual, I felt the need to re-create my own spin off version when I got home. Don’t miss my most recent knock off recipe: Vegetarian Greek Pasta. My mom’s recipe called for ham which I don’t normally eat, so I knew I wanted to find an alternative. Also, I try to be a pretty basic gal. I wanted as few ingredients as possible and as little work as possible. #slacker –actually I prefer the term minimalist…it just sounds more up and coming. Like I’m a hipster who has all the answers to life’s biggest questions. I wish. Today, I just have the answer to easy peasy pea soup.

*Chef’s opinion* I highly recommend using bone broth in place of chicken broth if you are able to. I have a great recipe for bone broth here: How to: Asian Chicken Bone Brother Recipe although I’d skip the ginger if you want to make the broth more universal. The ginger flavor wouldn’t wind up tasting all that great when added to this recipe. No, thank you.

Ingredients

4 cups chicken broth/veggie broth
3 cups frozen peas
1/2 onion
4 cloves garlic
2 tsp salt
1/2 tsp pepper
4 pieces turkey bacon



Get Cookin’

  1. Chop onion. Leave garlic whole.
  2. Add broth, peas, onion, garlic, salt and pepper into slow cooker.
  3. On top of all other ingredients lay turkey bacon.
  4. Cook on high for 4 hours or low for 6-8
  5. Once peas, onion and garlic have softened and bacon edges have browned, use a ladle to scoop out 1/2-3/4 of the peas along with some broth. Be sure to include onion and garlic cloves as well.
  6. In a blender or food processor, (I used my NutriBullet,) puree peas, broth and vegetables.
  7. Once fully pureed, slowly pour mixture back into remaining peas and stir until well combined.
  8. Use kitchen scissors to cut turkey bacon into small pieces. Stir in with the rest of the soup.
  9. Serve hot.
