Paleo Spicy Chicken and Pineapple Tacos

Have I mentioned how forever thankful I am to have a best friend? My family and I went over to her house the other night and she had these amazing pork tacos (or at least they smelled amazing, I don’t eat pork.) Tonight, for my own family, I decided to see if I could come up with something similar only using chicken. I think they would all agree; I nailed it. These paleo spicy chicken and pineapple tacos are the perfect combo of sweet and spicy and of course, low on carbs. Which is perfect for dinner because, this body doesn’t need carbs when it plans to sit on the couch and watch Friends re-runs all night. If you are planning on doing the same, let me just get right to it.

Chicken Ingredients

3 chicken breasts
2 Tablespoons vinegar
1 lime
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon paprika
1/2 teaspoon turmeric

*Lettuce leaves for wrapping

Pineapple Salsa Ingredients

1 tomato
1 green pepper
1/2 red onion
1/4 pineapple
1 lime
1/2 cup cilantro

Get Cookin’

  1. Preheat oven to 350
  2. In small bowl combine vinegar, chili powder, garlic powder, oregano, cumin, salt, pepper, paprika and turmeric.
  3. Squeeze lime juice into mix and combine until it forms a paste
  4. Coat chicken breasts in chili paste
  5. Bake in oven for 45 minutes
  6. While chicken is cooking, prepare the salsa topping
  7. After chicken is cooked, slice into thin pieces. For a spicier chicken, coat chicken in remaining juices and seasonings.
  8. Place chicken into wraps and top with pineapple salsa

Start Salsa

  1. Mince tomato, pepper, onion and pineapple.
  2. Squeeze in lime juice and mix.
  3. Top with cilantro and stir one more time.
