This Monkey Muesli Recipe probably my second favorite breakfast recipe after my waffles. My family and I love muesli (or overnight oats) especially during those summer months mainly because you can pre make servings into Mason jars so when morning comes it’s a grab and go but totally delicious and healthy start to the day. While you can make muesli so many different ways, our family’s favorite is Monkey Muesli!
(for one serving)
1 cup unsweetened almond milk (or regular skim milk)
1/2 cup oats (I use Trader Joe’s Gluten Free Oats)
2 Tablespoon Peanut Butter (we use Costoc’s organic)
1 Tablespoon dark chocolate chips
1 tsp chia seeds
1 tsp organic maple syrup
This recipe is so easy (what do you expect) and absolutely delicious for any person or family that finds themselves on the go! Like I said, this is our personal favorite way to make it but be on the lookout for different versions too!
