These delicious chocolaty treats are perfect for those with a gluten intolerance or trying to watch their sugar intakeYou could also dress them up a bit by using Andie’s Mints instead of chocolate chips. My husband personally likes topping them with peanut butter since he’s a Reese’s addict. 

I made these gluten free favorites last weekend when I was visiting my mom. To my dismay, I left them all their when I made the 6 hour trip home. No surprise, it’s been 2 days and my mom is asking for the recipe. She says my step dad refuses to believe that there are actually black beans in them. I don’t blame him. These are so delicious, it’s hard to believe. Well, here is the proof.

1 can black beans (15oz)
1/2 cup dark chocolate chips
3 Tablespoons coconut oil
3 eggs (or 3 flax eggs to make vegan version)
2/3 cup pure, organic maple syrup (or sugar)
1/2 cup cacao powder (or cocoa powder)
1 teaspoon vanilla extract
1/2 teaspoon baking powder

 5 day sugar free detox

Getting Started

  1. Preheat oven to 375
  2. Add beans, oil, sugar, powder, vanilla extract and baking powder to blender or food processor.
  3. Blend until smooth.
  4. Add 1/4 cup of chocolate chips to mixture.
  5. Blend briefly. Just enough to get chocolate chips broken up.
  6. Spray cupcake tin or line with more coconut oil
  7. Fill each cupcake section almost completely full. Brownies will not rise much.
  8. Bake for 20-25 minutes.
  9. Allow to cool for 30 minutes before eating.

And that’s it! Seriously so easy! Most things I make involve me tossing the ingredients into my NutriBullet and popping it in the oven. Low maintenance, high taste and quality all the way!
