Fluffy Glazed Baked Gluten Free Donuts

Being gluten free is no fun. Don’t get me wrong, I am totally thankful people figured out that this is actually a thing, because I struggled most of my life with excessive tiredness, mood swings and stomach bloat and now it all makes sense. There are a few foods that I’ve had to give up that have been the absolute hardest: big pretzels, crescent rolls, donuts, rolls, buns, breadsticks, breaded chicken, breaded anything, ice cream cones (the cone)…Oh wait, where was I? Right, donuts. When I started eating gluten free I was especially particular on making sure I was making healthy, low processed, low sugar foods as well. This is a great idea and there are truly so many awesome tasting foods you can make without compromising your healthy ingredients. In fact, I have a book all about it, and it’s free! But sometimes, there is no substitute for a good ‘ol fashioned pastry. Sometimes, you just gotta splurge. Instructions
  1. 1. Preheat oven to 350
  2. 2. Combine all dry ingredients.
  3. 3. In a small bowl crack egg whites.
  4. 4. In a separate bowl combine all other ingredients (melted butter, vanilla, milk and egg yolks)
  5. 5. Slowly add wet ingredients into dry ingredients.
  6. 6. After fully combined, add in egg whites.
  7. 7. Pour batter into greased donut pan. Fill 3/4 of the way.
  8. 8. Cook donuts for 8-10 minutes.
Glaze
  1. 1. Combine sugar and milk
    donuts, gluten free, dairy free, gluten free donuts, doughnuts, dairy free donuts, doughnut recipe, donut recipe, easy to make donuts, baked donuts, desserts, gluten free, Bob's Red Mill, Bob's Red Mill Gluten free flour
  2. 2. Drizzle over the top of your donuts
  3. 3. For a thinner glaze drizzle soon after removing from the oven, for a thicker glaze you can add sprinkles to wait until donuts have cooled

    OMG. Girlfriend I know the feeling. I’ve had to completely change my diet because I was diagnosed with an autoimmune disease, and it effects my digestive system. So my diet is similar to yours, plus dairy free. Boo! Definitely trying this recipe with almond milk because I miss donuts!!! I had oat milk in Sweden but grocery stores don’t seem to sell it where I love. I had half a donut at my wedding last year (we had a delicious donut tree), and it was a nightmare the next day.

      Aww Kris, I’m so sorry! I’ve had those same moments of weakness where I think a little bit won’t hurt…we know how that goes. Blah. Dairy is one thing I have been able to manage the occasional indulgence with and I am thankful for that!
