I don’t know about you, but I have children that eat non-stop. Well, this past week I was talking to my friend about it and she asked if I ever made balls with seeds, coconut oil and peanut butter; really fattening things that would help fill them up. Well, I have made balls like this, similar to my Protein Bites, but I loved the idea of making them with a purpose in mind. The purpose: to fill my kids up for as long as possible with as small of a bite as possible. I mean, I’m only one woman and a woman on a budget! I swear, what is intended to be one week’s worth of groceries, usually ends up being about a weekends worth. So, I headed strait to the kitchen, found all the most filling, healthy, fattening ingredients I could (good fats of course) and got to work. In 15 short minutes, Fat Balls were born.
I’ll be honest, my kids love them! They beg for them, they eat way more than I intended them to. So does my husband. It would seem they didn’t fill up my family as good as I had intended, but they do love them. A lot! So do I!
1 cup oats
1 cup sliced almonds
1 cup pitted medjool dates
1/2 cup coconut oil
1/2 cup shredded coconut
1/4 cup almond butter
1/4 cup chia seeds
1/4 cup ground flax seeds
1.75 oz cacao (I used 80% cacao) (plus extra for drizzling on top)
1. Put dates and almonds into blender until well combined.
2. Finely chop cacao bar.
3. Combine all ingredients in one bowl.
4. Take inch sized pinches of dough and roll them in your palms to form balls.
5. Place on parchment paper. Should make about 20 balls.
6. (optional) Melt and drizzle additional cacao on top of formed fat balls.
